I'm getting tired of the same old same old stuff i cook.

What are some unique dishes i can make(any animal protein, or no protein i like a nice veggie dish).

When i start to get bored i usually scour a couple of the cooking youtubes i frequent to see if anything looks good but these channels have been real bunk the past few months

• Vadas (Hungarian carrot gravy).
• Curried pork pot roast (I'll be making one soon using a pork shoulder since they're cheap right now).
• Tahu isi sayuran (fried crispy tofu pockets stuffed with sauteed vegetables).
• Pastel ayam (basically chicken pot pie with pieces of hard boiled egg formed into hand pies like hot pockets).
• Ragù verde di pollo (blanched, shocked, chopped and pureed mature spinach makes the base of the sauce rather than tomato and chicken wings are used as the meat, but the other ingredients and method are the same as the more typical Neapolitan ragù).
• Gattò di cavolfiore (mashed cauliflower thickened with instant potato flake mixed with eggs and layered with cheese and salumi as a baked casserole, a veg-forward variant of the more common Neapolitan gattò di patate).
• Zeppole napoletane (lemon-flavoured potato dough doughnuts; also really nice as waffles).
• Millionbøf (basically sloppy joes but I'm brown gravy rather than ketchup-based sauce, served with rice or mash)
• Keema pav (basically curried sloppy joes with peas in it).
• Forgot the name, but my nipnong aunt used to cook this spicy mustard leaves dish from Southern Nipland; mustard leaves are blanched and shocked then stir fried in plain oil with garlic, chilli and that fucktardedly strong mustard paste nipnongs like, finished with sesame oil. It does not taste Japanese at all because it actually fucking tastes like something lmao
• Sichuanese eggplant salad (fried eggplant drained and dressed with onion greens and a still-hot, freshly-made hot-and-numbing oil, allowed to cook before eating).
• Yellow split pea soup with smoked fish (salmon or trout are great).
• Pork chops in sauerkraut gravy (mount your roux with sauerkraut and onions then add the stock to make the gravy and re-add the chops in there to finish).
• Beetroot fried rice (garlic, green chili, shredded beetroot fried with rice, finished with Maldives fish and topped with fried egg).

Try shakshouka, moussaka, dahl, any stew with veggies, herbs and maybe lentils or chickpeas. Sauerkrautgratin is good too. I try to look for fun dishes in different cultures if I need some inspiration.
