Don't cook the sauerkraut, you'll kill the bacteria.

Also, eggs, bacon, sauerkraut is good too.

Fry the bacon slow, so the fat all renders out and the bacon is brown and crunchy, not on high heat so that it's a mixture of burnt and chewy.

Scramble the whites in the pan, without breaking the yokes.

Sauerkraut straight from jar to plate.

Remove bacon from pan before cooking the eggs, but leave the grease in the pan.

At the end you should have crunchy bacon bits, scrambled whites, runny yokes, and sauerkraut all separate, and you can combine for each bite (cooking them together is horrid sloppa)

Last time I made brats, I did 'em from scratch so I could play with my new grinder attachment. They turned out delicious, but looked like poop, pic related. A few days later, my doctor told me I have horrifyingly high cholesterol (750 mg/dL triglycerides; normal is less than 150, "high" is 200-500) and that pork and beef will only make it worse. Kind of upset, since I have roughly four pounds of pork shoulder in the freezer right now, after I bought a bunch on sale.
