Did you guys know you could take these cheap-ass burritos and buy any decent mole or verde sauce and sour cream and maybe cheese and have basically restaurant quality wet burritos every day for almost no money? Because I didn't until now and I've been eating these fuckers dry since forever

For greater justice, just blend Taco Bell brand refried beans and meat of your choice and stuff it in a Mission Extra Soft. Meat can come from a can pre-cooked. It doesn't matter if even you can cook. Those microwave burritos are all lazy convenience food and vastly inferior to what you can accomplish with even a slight bit of effort.

Top with queso from a tub and shredded lettuce and whatever else.

I've thought about using them to do something like an enchilada casserole with just some store bought enchilada sauce plus cheese and toppings. Seems like cooking them wet would result in a better dish than following the directions on the package, which always kind of sucks.

Just do normal burritos baked in a cake pan 3 or 4 at a time filled with just meat and beans, cheese / sauce on top until melted, and garnish with cold toppings like lettuce and sour cream. Helps if you cook the meat in lard for authentic mexican flavor.

You'd be surprised the number of people who think the only burritos are the mission style that are eaten by hand when a burrito on a plate and covered in stuff is the more authentic way.

That's exactly what I'm talking about. The only reason I'd use frozen burritos is because I can keep frozen burritos and canned enchilada sauce on hand and throw together a lazy meal with almost zero effort and barely anything extra from the store. I wasn't suggesting it like it was some brilliant idea to replicate restaurant Mexican food like OP was implying. More than anything, I'm just always disappointed with frozen burritos, and yet still end up buying them once a year or so because they always seem like such a good idea for a low cost, zero effort meal when you don't want to cook - and then they sit in my freezer for months because they're never good.

Also, the image you posted is literally a mission style burrito served "wet", which really isn't that much more authentic than Chipotle.

I think Frontera's mild taco simmer sauce is simply outstanding, a nice puree of anchos, chipotles and zesty tomato and spices, thick too. I will add to a 1.5lb package of ground sirloin (plus chopped onion or peppers). There is zero reason you can't freeze ahead this meat to thaw for burritos, tostadas, double decker tacos w/refried beans or cheese, or even stuffing enchiladas to bake in cheese.

I've only ever found frozen burritos hard and horrible and mostly beans. If I was buying the proverbial easymode snack to nuke, it would be Goya cuban style tamales. Hit those with some cholula or Louisiana hot sauce. Or bake up some frozen pretzels for your favorite mustard dips and an icy cold beer. A bag of steamed edamame, steam in bag brown rice, and quickly pan crisped frozen pot stickers is better too. Heck all of your toppings can make oven baked nachos better than a wet burrito.
