is a carbon steel worth getting? I have a stainless steel and a cast iron that I love along with a cheap nonstick that i'm not so in love with.

i dont understand why cast iron is so often recommended when carbon steel does everything it does better

>> No.20088472

Carbon steel pans are thinner and transfer heat faster than cast iron. Cast iron will retain heat better. Different pans for different uses.

Carbon steel is used in fast food joints, which is where 99% of the food consumed by this board comes from.

Cast iron has a higher heat capacity (more mass) than carbon steel.
Carbon steel heats up more quickly, and cools down more quickly. Cast iron heats up more slowly, and cools down more slowly. Sometimes one is better than the other.

I'm from EU and almost all the pans in our stores are non-stick

>> No.20089221

>>20088852
No, it just heats up faster. The cast iron will stay at a more even temperature once it's fully heated up since it has more mass, which is important when you add food or flip.

>7 people out of 28 don’t use stainless steel oans
I prefer cast iron but if you don’t use stainless steel you are a cooklet.
This is a fact.

Cast iron will have more uneven spots

>> No.20089240

surprised there aren't more PTFE chads here

>> No.20089249

I think I'm gonna move from non-stick to carbon steel. I would use cast iron but I don't want to wait for it to heat up and don't like the rough surface.

i like cast iron. millions must vote.
