I used to think these videos were one off occurrences, but my cousin lived there for three years doing contract work and he told me that street food is absolutely foul.

I heard you have to be careful even at SUPER high luxury places. Had a coworker that did IT and had to train people in New Delhi and she said she almost had a nervous breakdown over there. That people walk barefoot for miles and then walk into the office. The hotel she stayed at (which catered to westerners) had brown water coming out of the shower. Another coworker told her that sometimes the “high end” food at the nice restaurants come from the streets if they’re running low—like nobody gives a fuck over there. She survived off Uncle Ben’s rice and canned foods her relatives sent her. Same with water and that it doesn’t even matter if you shower over there because everything smells horrendous. And yet people save up for years to go there on vacation wtf

That shouldn't be surprising. The very idea that you can just walk up to a stall or shop and have a meal is a strictly European thing; so 3rd worlders would sort of imitate that in pastiche because someone's willing to pay for it; but they'd not get it quite right. it really just depends on the quality.
I find most Indian restaurants in Canada to be a bit disgusting, the meat has blobs of fat stuck on and they use too much oil. it can be good if you use good quality ingredients and don't drench your food in oil and overly spice it

Yep, in any Indian house with responsible parents and adults, they always tell you to not eat outside food. And every time our family travels to a different city on vacations and eat the local food, we end up with food poisoning. It's not only because of the hygiene but also from all the spices they dump into the food. Not even Indians can tolerate too much spice.

Regular Indian food cooked at home is usually pretty mild, and in a lot of houses they don't even use spices for religious reasons. Like most Brahmin, Jain, Gujarati, Marwadi houses don't put any spices in their food besides a few cumin and mustard seeds in the oil while tempering it, and some turmeric for color. And in place of onion and garlic, they usually use hing powder (asafoetida).

My professor in grad school was like that, fully vegetarian, absolutely no ginger, garlic, or mushrooms either. Made going to restaurants with him an absolute nightmare because he was a picky eater too.
