One pro tip, if I may add, if you are using a dutch oven throw in an ice cube with the bread when its ready for baking then quickly close the lid. This will create steam and really help give the dough its rise.

Thanks anon, I appreciate the recipe and the tip. I got a cast iron dutch oven, a nice proofing basket, and a "sourdough home" for Christmas. I was mostly planing on trying no-knead breads but I want to try some more traditional recipes as well. Never made traditional bread before so its all new to me.

A "sourdough home" or an electric proofing oven are luxuries not necessities. Back in the day home backer would have tried to find or create places around the house with the correct temperature.

Sourdough is not a bad choice if you want leavened bread without store bought yeast or chemical leavening agents. However in a pinch simple flatbreads and crackers are probably easier to make.
