Never understood this fear or dread in regards to cooking a turkey. It's just a really big bird. I roast it no different than chicken and it fine out tits every time.

I have a boneless turkey breast roll and it takes 2 hours to cook... but i have to be awake in the morning to cook it for the family which is the hardest part of all of this as my hours are 4pm - 10am usually

It's not the fundamentals of cooking a large bird all the way through, electric oven thermometers and high tech pellet grills have made it far easier for unskilled chefs to prepare a holiday meal. The anxiety comes in when thinking about missing your one shot to to be a host. Most people can't just take a mulligan on a whole turkey and if you screw up two years in a row you're reputation in the family can be tarnished for a decade in some circumstances.

I've done side-by-side turkey roasts to test different preparation methods and a wet brine is the best crowd-pleaser, also, it produces the most turkey drippings for the best gravy

Eh. I cooked a perfect turkey and sides on my very first try. I did all the ridiculous shit of brining it etc etc etc but every other time I cooked one, I broke the bitch down to cook each piece to it's perfect doneness, adding them at different times so they'd ask finish together. I also use the back and wingtips to make stock for gravy.
Now that I'm not longer cooking for extended family because reasons and just my own, we have the breast and I freeze the other parts for eating at other points in the year.
