just buy your own 3m half face size medium and a pair of p100 cartridge filters (the ones that block organic gases and particulates) . if your seal is good you'll literally smell nothing. it's worth the investment if it's really that bad and it's something you do often.

that one is only particulates and not gases but it will work. I've only ever used 3m so I can't speak for the quality of the brand. you may still smell gases like ammonia and alcohol but it should filter out the general rotten grease smell.

some general tips:
you're supposed to shave to get a good seal but since you're not doing a dangerous task it's not really necessary

to test if you have a good seal, put your hand over the exhalation piece and exhale a normal breath. no air should escape.

Then plug the inhalation ports with your thumbs or cover the filter with your hand and squeeze toward the mask. when you inhale it should suck to your face and you shouldn't feel any leaks. (this is harder to test with circular cloth filters than cartridge filters)

also it's a good idea to wipe the inside of the mask down with a paper towel covered in alcohol after using it to prevent mold growth especially if you're sweating a lot.

for occasional use I wouldn't expect to have to ever change a particulate filter. you'll know it needs changed when it gets harder to breathe in it because it's clogging up, which I doubt will ever happen with what you're doing.

Not exactly. It works kind of like a septic system, except instead of shit (unless it's an Indian restaurant), it's fat. The difference being that fat floats to the top, sludge and shit typically settle. The wastewater then freely flows to the leach line, or in this case, the sewer, while the fat stays atop.
