How good is "real" wasabi anyway? Most sushi practitioners seem quite happy to defer to the classic horseradish + mustard.

i can be particular about food quality but wasabi is a non issue for me, but i dont really eat sushi that often and i like the horseradish. its what im used to. same sort of thing that goes for real vanilla extract vs fake. i like the fake stuff way better

I had it whence in a fantsy pance sushi place in Sydney.

It was delicious, more mild than the counterfeit whore's radish kind, or at least it crept up much slower than the fake stuff. Wonderful texture, and sort of juicy. Actual first-note flavour made no big impression on me although I didn't sit there taste testing it by itself.

Significantly better than imitation. If you're going all out for a great homemade sushi dinner it is absolutely worth it.

Soy sauce is the salt, and wasabi is the pepper for sushi. Think of pre ground vs. Freshly cracked and you'll sort of understand the difference.

Me. :D It is significantly cheaper, and I have a lot of fun with my friends making sushi, and then pigging out on an excess of delicious sushi. I have practice, so each piece of nigiri takes me about 30 seconds or less to make.
There is an excellent fishmonger in my town, and they have awesome bluefin tuna(akami, chu and chu toro), excellent salmon, uni, scallops, fish eggs etc.

If you are just craving some raw fish and rice you can make hand rolls with essentially zero skill.
Half a sheet of seaweed, 3 fingers worth of rice, maybe .5 inch tall, sliced raw fish on top. Roll it up. Takes roughly 30 seconds to make one roll.

Look. This cost me less than 50 bucks to make. I wasn't as good at making nigiri, but they're still pretty okay.
I can make better sushi rice than 80% of all sushi places in my area, so it's a truly glorious dinner.

I forgot about chirashi bowls also. You just slice up a bunch of fish into sashimi pieces and arrange it all on top of a bowl rice.

Bay area, dummy. I get excellent quality rice. It's stored in a climate controlled environment and milled the day it is shipped out. It's also new harvest rice. Better rice than most people have ever tasted. I also get top quality rice wine vinegar for the seasoning.

it's mid. if it was really that big of a difference it'd be more readily available. i grow it myself, it's not as hard to grow as people pretend it is, the real reason is that the imitation is already good enough and cheaper than commercially growing wasabi. most places you find real wasabi make sure to let you know it's LE REAL because it's a gimmick for weebs to feel yellower

Its not that expensive because you don't use much. I get good quality tuna for about $20/lb and use a quarter pound to make enough sushi for 2 people
