I worked international banquets for nearly a decade and had to make and eat food ranging from spaghetti for children's hockey teams to royal families from asian and african countries. I even had to rehydrate some smoked, dried, and preserved fish one group brought from their country to serve with their rice. I haven't had the chance to try jellyfish. Grab some fucking jellyfish.

it's a weird soft squish until the actual bite which is very crunchy. Like a slimey al dente pasta that is very thick and the slime isn't a bad thing. not very flavorful on it's own from what I remember.
