You're not cooking your caramel enough. The darker you take it, the less sweet it becomes and the more the flavor changes-caramrl should have a very pronounced flavor. If you take caramel to the right level of darkness it also develops just a hint of bitterness that helps further counteract its sweetness- just be careful because at this point it takes literally seconds to go from 'perfect' to 'burnt and acrid'.
