There's so much noise and conflicting information out there. Are veggies more nutritious raw or cooked? Is it actually significant? Does it even really matter?

There's so much "eat X vegetable raw, cooking kills all the nutrients" and "X vegetable is unsafe to eat raw, you have to cook it to eat it safely"

Cooking breaks down the cell wall of the veggie making it easier for us to digest and get the benefits of the nutrients from the veggies.

Both are true. Cooking does destroy some nutrients, but also makes others more available. Some vegetables are also tougher and benefit from cooking for that reason to soften them like potatoes, even if potatoes are more nutritious when raw you're probably not going to be able to eat very much.

For those that can be eaten either raw or cooked, which is most of them, the difference in micronutrients isn't going to outweigh a multivitamin. Macronutrients are generally more readily available from cooked food.

Depends on the specific vegetable. In general, cooking vegetables does destroy some nutrients but it also make them more digestible/ bioavailable.
