In all seriousness, I did an economics essay on the corner sausage vendors in the little town I lived in.

Once upon a time, a family saw all the traffic on the road in front of their house, and they decided to try to sell things to the people driving by. They decided to make sausage, and they did a great job, so lots of people stopped and bought sausage from them.

Their neighbors grew envious, and within weeks, all five neighborhood families were busily making and selling sausage to the passersby. But the passersby were cheap bastards like all Chinsects, so the families began undercutting each other like mad, increasing the amount of fillers in their sausage, using sugar to cover up the lack of other taste, making the sausages thinner, and so on.

Eventually all the sausages tasted like highly processed garbage, and soon the passersby began just passing by, because who wants sausages that taste awful? But the families were locked in bitter competition with each other and refused to give up, so even to this day they all make shit-tier sausages and only sell a few at the lowest possible price points to the cheapest stupid chinsects driving past.

My grandparents came to the West
They weren't professional trained cooks
My grandfather's sister taught my grandparents how to cook Chinese food for white people because she had worked in restaurants before
They opened up a restaurant which sold the kinds of Chinese food that white people wanted to eat and which was economical and they got quite wealthy from it
They never ate the food that they cooked at the restaurant at home with the except of the dumplings they made and deep fried food

Also I'm not sure how dim sum fits into this
I feel like dim sum requires way more organisation and skill than a typical Chinese takeaway restaurant so if you're immigrants in the 60s/70s it is probably smarter to open a takeaway restaurant
Once there is a significant enough Chinese population it could be worth doing dim sum but my family lived in a 99% white area

i just ordered takeout mongolian noodles for 15.25 and i have never experienced such a wide discrepancy with price and taste in my life.
there is no flavor in this. the "beef" is just rubber carvings. i even ordered it as "spicy"
theres a pool of liquid at the bottom and I sipped it to see if there was ANY flavor or seasoning put into this at all and its basically warm water.
either they need to be run out of the business with pitchforks or i got trolled.
