I've pulled exactly one shot from it so far and it was shockingly bitter but tasteless otherwise.
I think my tamping was uneven, 18g at a fairly fine grind. Had the preheater on the medium setting for a light-medium roast. I noticed Hoffman seems to remove the pressure gauge before pouring the water and put it back in after, but that both seems pointless and needlessly difficult since it comes with the valve that allows the water into the brewing chamber without removing it. I tried to keep it at roughly 9 bars over 35 seconds.
I will admit I'm not as used to espresso as I am filter coffee, but it didn't seem to really have a proper layer of crema and the taste was unpleasant.

Grinder coarser. You really don't need 9 bars. I usually top out at 6 on light stuff, but just be open to experimentation. Same with your ratio. Guessing you're pulling a 1:2 to start with. Try a 1:3 and tell me how it tastes. I pull 1:4 since thats about all I can get out of the 58s brew chamber. 16.5:65 in 10-30 depending on what profile I'm running. You want to keep that fill rate consistent. You'll get very different results on a "fast lift" vs "slow lift" with that valve. Lift slow, treat that as part of your initial preinfusion. When you're at the top, pull slow. If you're hitting a brick wall, you're at way too fine of a grind so trying to force through it is just going to make you channel. You're going to be able to feel that puck saturate and loosen up as your first drops come out, thats when you ramp up your pressure.

What coffee are you using and how long off roast? You really don't want crema. Suspended coffee fines trapped in co2 don't taste good.

You put a scale under your cup. The cheap option is a $13 weightman off amazon if you don't have something sitting around. Always want to fill the chamber to full, and then top it off a little until water is above the valve. I fill a little and start raising the arm to crack open the valve while I'm still pouring. Might take a little jiggle at the top to get all the air out. You don't want to be pulling through a bubble at the top of the chamber.

Day 1 after mentally blocking out all the tposing and standing up through roofs of cars I was finally starting to get immersed. Driving down by the "mall" near the legless tygerclaw with some tunes on. My car clipped a trash bag on the side of the road and shot off at a right angle at about 140mph. Immersion gone. I mean beans roasted or selected with the intent of brewing espresso. I'm not trying to use Folgers for it, I have reasonably fresh and quality beans that I ground myself, but they're a light roast that I normally use for pourover. I've gotten good results with pourover out of this bag, but I'm extremely new to espresso and have rarely ever had it outside of a milk drink from a cafe, so my presumptions are basically nonexistent. That's kind of the hard part; I don't know what to expect, so it's difficult to tell what to adjust. I can tell when my filter coffee is overly bitter or sour and know what to fix there, but espresso is somewhat harder.
That said, if you know any quality roasters in the US who do online sales I'm certainly open to recommendations. Espresso or otherwise.

Rpm will skew your particle distribution. You're aiming for consistency. Feed rate will also affect things. The most hyperautistic coffee people slow feed their beans, so grinding a small amount and taking a little break with a hand grinder shouldn't be the worst thing you can do. Its when you're constantly starting and stopping, making it a 1/2 rotation, then an 1/8th, then 1/4 is where you'll get inconsistency. It won't "ruin" your grind or anything, its just going to be harder to repeatedly do the same random motions from cup to cup. You are the motor. Good motors don't drop rpm. Try not to be a shitty motor.

You couldn't pay me to daily drive a pavoni. Some people get a kick out of using quirky obsolete tools you have to temp surf and guess timings, others want to make good coffee. Flair58s are dead simple and thats a good thing. If your heater ever burns out you can still manually preheat it like the 58x and others+the whole chamber detaches with one set screw if you had to get a replacement from them. No ripping machines apart, redoing wiring, descaling lines, replacing boilers or pumps etc etc. Its just a hot stainless steel tube ready in minutes whenever you need it. At most you'll need to replace some cheap orings every once in a while.

I got a refurbished 58 and the valve in the brew chamber where the pressure gauge hooks into was improperly set by the previous owner so it wasn't pulling back up with the lever. Realigning it took no time at all, and from my rather clumsy experience setting it up it seems like the entire package is extremely easy to maintain and repair/replace.
My only real qualm is that the cable doesn't completely detach from the main brew chamber so if something happens to the "pigtail" you'd have to replace the entire thing, but that's a small point of failure and it's not in a position where it'll be subjected to much wear anyway.

Having trouble brewing with good coffee. For reference, I tend to drink shitty coffee because it's cheap and I don't mind the bitterness. I have a Fellow Carter that I quite like because I don't tend to want to drink coffee on the drive to work - which it isn't suitable for because it's bigger than most cupholders and it's screw top - but it's nice to drink out of when I get to work and take the top off and drink from it like a normal cup or mug. reporting back on the 100 pajeet monsooned robusta. can't dinstinctively taste peper nor licorice, like if it would not be written i wouldn't have thought about it. beans taste like tasty robusta, with nutty, woody, smoky, and chokky flavours. you can tell it's in the more tastier range of robustas as it lacks the rubber and chemical taste and aftertaste of shittier beans. nutty is the flavour that's most present for me.
