What changes do you make to your chili that's not typically part of the average chili recipe? Me I add shiitake mushrooms sautéed in sesame oil and chili flakes. It works really well and I highly suggest you to try it if you're not a purist

That's the non-sloppa baseline. Other than that you can add corn flour and corn, or mushrooms. But if you're bored with chili just go for one of the endless beef stews every country has like beef bourguignon, tuscan, whatever. Usually involves adding a bottle of red wine to it.

i tried red wine in my chili last time and it really didn't turn out well. i probably used too much or the wrong kind because it really took over the whole flavour of the dish. i made a pretty big batch and bought a small half-bottle so i really didn't think it would be THAT pungent

A small amount of chocolate product goes a long way. I've used cocoa powder, baking chocolate, but I've actually found that the bosun chocolate stout from TJ's used to deglaze is perfect. I don't like to drink it, so I use half the can then freeze the rest for next time.
Also I like to use either viet mushroom seasoning granules or hon-dashi. They just make everything so much better, it's like a secret weapon, I use them in gravies and bisques too and everyone says it's the best they've had and no one's the wiser.
Try fire-roasted poblano or hatch chiles, and dried ancho. Also if you use corn masa flour, try toasting it golden brown in the oven first you get a better corn flour.
