Got a bunch of these which expired back in 2021. Is it still safe to eat them?

As long as there aren't bugs in them yes. mix it around a little after opening it and check if the rice hangs to the walls of the container. if it does then something got in it like a tiny spider through a small hole or gap in the adhesive rim.

Also fats starts to degrade after a couple years and while harmless to consume, it may taste slightly off. It doesn't mean its dangerous but they might just taste bad.

it's dry rice with enough salt to kill any bacteria unlucky enough to be in there.

other than it going stale in flavor over time, the food itself would last forever.
