You're very unlikely to get cancer from having a few cinnamon buns now and then. Just stick with the cassia and be sensible about how much you use.

I switched to the sri lankan stuff and I found I enjoy it more if I eat it a certain way. Before I was having butter + honey + banana on toast, and sprinkling the cinnamon on top. It is a lot better if you put it on the honey directly and mix it in a bit.

America's Test Kitchen prefers cassia even though it will wreck your liver. Ceylon really is inconveniently mild.

I bought some and was disappointed with that. It's more expensive and you have to use more. It's probably better for adding at the end on top of something so you preserve the flavor and don't lose it by mixing it with something else.

Stop worrying about fucking everything, jesus christ. Literally everyone gets cancer eventually if something else doesn't kill them first, and literally every single thing you do or ingest will have some effect on your risk of cancer one way or the other. It's inevitable. You can barely call it a disease, it's more like a natural stage of life. How about don't smoke, don't drink excessively, and live somewhere with clean air. That's it. Stop worrying about every tiny little aspect of your lifestyle that increases your risk of cancer from one trivial fraction of another trivial fraction of a percent. That's no way to live.
