If you're somewhere coastal you should try and stick to the spots that buy directly from the fishermen and market. But you're not wrong, my rustbelt city has an excellent seafood restaurant - but its expensive and still gets mogged by some of the places I've had on the coast

As for Louisiana food, gumbo and poboys you can't really go wrong with. I eat the cheap packets of etoufee with crawfish and rice all the time because it's so easy to prepare. We also have god like unhealthy corner store food similar to some fried food you might find in Chicago. Save more is my shit.

Quintessential americana is barbeque, so you could do ribs, brisket etc.
Cubano sandwiches are popular in Florida from all the Cuban immigrants but it's been adopted as a staple (and amazing) american sandwich.
Tex mex or California/Baja-style mexican food is also quite good. So for Baja regional latin food that would be battered fish or shrimp tacos with a mayo-chipotle sauce and shredded red cabbage with a squeeze of lime and cilantro.
