It's a texture thing. Basically super soft and melty due to the fat content. Not super strong on the beef flavor - beef ribs will have far stronger flavor. Basically it's a beef rib experience turned up to 11.

The Korean bbq experience of the thin sliced short rib is as close as you can get to the tenderness of wagyu without paying the high price of it, and comes with the bonus of higher beef flavor for the money. Basically take that experience, turn up the fat content, turn down the beef flavor, and make it 5x as soft, and that is wagyu as a full up steak.

The big thing people don't realise about wagyu is it's essentially meat from a HIGHLY diabetic cow. Diabetes (see: insulin resistance) can make it difficult for your body to store fat properly, resulting in fat spilling back out. You see this in American lardos where the fat just collects at the front of their gut. The same effect causes the "marbling" in wagyu meat. The cow can't store the fat properly so it just goes wherever.

The main reason wagyu is so expensive is the diet needed to give a cow insulin resistance THEN fatten is up is way more expensive than just feeding it hay.

I've had it thricely: once as sashimi-like, once as a steak and the last time because a friend of mine is a fucking idiot and got a bowl of the shit thinly sliced for fucking hot pot.
The sashimi one was paid for by a guy I know who has no friends and basically pays people to hang out with him by buying them food or alcohol and shit.
Because I liked the sashimi, I got wagyu as a steak at a resto. I was very close to trolling the waiter and asking for mine well done but I got it rare to medium.
The last time, the slices literally melted into the broth. Fucking pointless.

It's quite nice, especially raw, as it's exceedingly soft. Before I had it, people told me that it's bland but I didn't find that to be the case at all and I overseason fucking everything. I don't recall what cut I had as a steak, but it was far softer than a typical fillet. While less pronounced than other steaks, it wasn't bland, having about as beefy a flavor as fillet itself (compare fillet's flavour to, say, chuck roast; fillet is less pronounced in its beefiness).
I don't recall how much the steak cost but iirc, the hot pot was $50 for s tiny bowl of slices.

Salt by weight 1.3 to 1.4 percent, rest it overnight in the fridge, and then fry it on a hot, dry pan (no oil or fat whatsoever) and it's honestly OK to cook to mid-rare to mid
