Blue cheese instead of butter. Or if butter then try browning the butter first (beurre noisette).
I also like doing the following:-

- Add a few teaspoons of cider vinegar/lemon juice.
- Herbs like coriander leaves, thyme, parsley
- Deglazing the pan after frying trout and pouring it on top. The potato acts like a sponge and soaks up all those lovely juices. Even nicer if you deglaze with some cognac.
- Spring onions/garlic/finely sliced raw onion. The hot potato cooks the alliums just enough so they aren't harsh.
- For those more experimental try a blackberry or two. Surprisingly nice.
