They should always be in Chili with red meat, the red meat and beans is what makes chili what it is. If it was with white meat or fish, it's a stew. The ratio for it should be 2:1:3 of meat to beans to spices. It should always have a strong aroma to draw you in to whet your appetite. Chili is always meant to be filling.

I don't believe they add any preferable textures or flavors. That being said, I don't mind if someone adds them. I just consider it "chili with beans" rather than just "chili". They make for great filler to stretch the chili for larger crowds. My only major stance on it is that if you're using chili as a sauce for hot dogs or something, beans should definitely not be there.

every big and small restaurant that sells them calls them "chicken sandwiches"

they refer to them as such instead of burgers because marketing has told them they sell more of them if they are referred to as sandwiches rather than burgers

this is because people correlate burgers as being made out of ground meat (not necessarily beef), so if you say "chicken burger", they assume its ground chicken and aren't as excited to try it, but if its a "chicken sandwich" they assume that its cut breastmeat and are more likely to buy it

this has happened over decades and now its common nomenclature to use only "burger" for ground-meat based sandwiches only, you can try to argue technicalities but at this point you're just coping (and/or live in a backwater shithole who hasn't gotten with the times)
