How do I get shredded cheese without 'cultures,' 'enzymes' 'color additives' and 'mold inhibitors?' I looked at every single brand they sell, and they all have this stuff.

They would use rennet, which is an enzyme. And let the cheese develop a natural culture like sourdough bread. It's just more efficient to use an enzyme derived from plants and add a starter culture to have consistency.

The only cheese that isn't going to have this is fresh cheese that's made with fresh milk and some kind of acid to coagulate it.

Well if you want to skip cultures and enzymes, you can buy milk instead of cheese, because they're what make cheese, cheese. If you want to avoid mold inhibitors, buy blocks of cheese instead of slices or shredded. If you want to avoid color additives, buy white cheddar instead of orange cheddar, or buy any other cheese with no color additives.
