How can I cook salmon so it doesn’t ooze this white puss? I’ve seen it cooked where it wasn’t covered in puss, yet every time I try, it comes out like this and I end up having to scrape it off just to find the fish appetizing.

Holy shit I've never had that happen to any salmon I've ever made. I usually just cook at 400 degrees 15-20 minutes, depending on the thickness of the fish.

You might get better results poaching it, but it's not your cooking process that's producing the exudate. It's a blend of brine and trimmings injected into the flesh being squeezed out and setting opaque as the watered down protein cooks.

I don't think there's any labelling requirement, all you can do is try different sources and avoid the ones that piss in your pan, it's annoying.
Since I googled it out of curiosity, picrel is actual fish cum, aka milt. Considered a delicacy by some.

That's what you get for buying cheap farm raised salmon. They have to add the red coloring to the salmon meat otherwise it would be grey. When cooked the artificial coloring turns whiteish gray and oozes out like that but not usually that much. Looks like you got a particularly poor batch of salmon that needed a lot of artificial coloring to make it look good. Check the package it will say solor added. Next time buy fresh caught and you won't have this problem

I never have this problem with salmon steaks/salmon chops, which I can only find at the fishmonger or H Mart so either steak doesn't do this for some reason or both the fishmonger and H-Mart buy fish which isn't injected with saline.
