How much curry is in there? You should have the equivalent of 1 mouse (1/3 rat) per gallon of curry. Add or remove mice/rats as needed to adjust for volume

Gonna add my own experience
Uncovered, you don’t know what kind of bugs and shit have gotten into it, so I’d say I wouldn’t try it
But I also massively hate wasting food. I made a big pot of boulliabasse (fish stew) on the counter once, covered. 5pm to 12pm. I couldn’t bear the thought of tossing out all that soup, so I brought the whole thing back to a boil, not roiling but definitely percolating, and boiled it for an hour.
Obviously, you’re sacrificing any semblance of texture in your ingredients doing this.
I did eat a small bowl, sat on it for an hour, and didn’t get sick. I ate one more bowl for supper, cooled it quick and in the fridge, and ate one more bowl for lunch the next day, but tossed it after that.
It’s pretty risky doing this, and you risk getting really sick doing this. I did so, thinking that if I got sick afterwards then it was kind of deserved anyways for fucking up

That's a myth. Spices were expensive before modern transportation and have no nutritional value. If you could afford spices then you could afford to not eat spoiled meat. A lot of them do have antibacterial properties that can keep meat fresh for longer in a warmer climate but that's not the same thing.

If in doubt, chuck it out. That said, it's likely fine, especially if you live in a cool climate. There's so much salt and other stuff in roux blocks that it'll help preserve whatever the food is for a while, I wouldn't worry. It isn't as if it has sat there with raw chicken either, so any bacterial presence will have to have started from square one.
My ~40yo Japanese housemate has been known to make curries and leave them on the stove top for literal days and he's completely fine.
