Right now I'm mostly eating a pound of chicken, two pounds of vegetables and 3 cups of rice cooked in stock, but it's getting boring.

Very simple. Don't eat any fat. eat only starchy foods like oatmeal, potatoes, beans, bread.
Don't snack and only eat twice a day and brush and floss after every meal.
It is imperative that you eat very little fat during the diet.
Ideally, you should eat hot wet starches, like oatmeal, bean and tomato stew, or pasta in sauce.
You can eat until you are full with this diet.

Do a 5-2 diet.
Eat at maintenance for 5 days out of the week. Then, 2 days out of the week have one modest meal or somehow restrict yourself down to 33-40% for your maintenance calories per day. Be sure to split the days up, do not do them back to back.
You'll lose weight this way, and yeah you will be hungry sometimes, but you won't be constantly hungry and you won't get tired from constantly starving yourself. It is pretty effective for people in your situation. But you gotta count the calories, and I mean every single one.

Also, this helps with the willpower aspecr of losing weight. If your brain isn't totally rotted, you can get through being hungry for a day. And it isn't like you are fasting, you can get pretty full off of those 600-700 calories.
It legitimately takes an autistic obsession (which is why you hear retards on here having success with such methods) to eat a good amount under maintenance calories day in and day out for weeks at a time. It just isn't feasible, unless you have body dysmorphia, are autistic, or have superhuman willpower studies show time and time again it won't work. You won't follow the diet, you'll over eat on cheat days, you'll sneak in mini snacks and write them off, or you'll gain it all back.
However, one day here and there of going hungry is doable. Just occupy yourself with other things, good luck!

- 50 grams egg white
- 1 egg
- mix together in bowl with salt/pepper
- approximately 40 calories of butter (one thin slice) to grease pan
- 14-28 grams of cheese depending on how low cal you want to go (comes out to 55 or 110 calories)
- make omelette
- 1-2 tablespoons of salsa on top

It's a pretty sizeable omelette and only comes out to like 200 calories or so. That with some black coffee is a nice breakfast.

Find vegetables you enjoy without needing to add oil - boiled cabbage is pretty good, steamed broccoli, green beans, etc. Use seasonings that don't rely on fat, like hot sauce, lemon juice, mustard, gochujang, miso, etc. If you want a creamy sauce, use yogurt as a base. When you do eat carbs go for carbs that have plenty of micronutrients like beans and potatoes. Include lots of water-dense fruit and vegetables like cucumber and melon and tomatoes. Nothing matters as much as staying hydrated and getting enough sleep.

I thought you wanted to lose weight fast. I started logging every calorie, limit myself to about 1,600 a day. My fitness app says I should be eating 2,100 cals, which tells me I need to eat less than that to lose weight.
I also take walks, and drink water like I'm trying to pass a drug test. With all that, I manage to lose about 6lb a week. You just need to learn to live with less. Realize you don't need as much food as you think. It's not as hard as you think.

Drink more water fatso. A lot of the time thirst is mistaken for hunger. But before you eat, drink a cup of water, wait a few minutes, and then see if you're still actually hungry. Then, while you're eating take gulps of water inbetween each bite. You will eat a lot less this way.
