Whether you can have below well done ground beef or not isn't a matter of the beef's quality. What matters is how recently it was ground. You can have medium rare steal because the bacteria exists primarily on the outside of the steak, and when you cook it the outside is obviously what you cook. When you grind that same meat the bacteria is now distributed throughout the meat including inside, and has a chance to proliferate even further. If you're going to do a pink burger the beef or chuck needs to be ground extremely recently. Like ideally minutes before forming patties. Whether it's trash or high quality meat.

Any piece of meat will have some bacteria on the surface. It can't be helped and it doesn't matter because you kill them all when you fry it.
If you GRIND the meat, however, you have now distributed the bacteria throughout the entire mass of the meat, not just on the surface, and scorching the surface alone will not longer kill them all.

He cooked a cactus in it and I forget what the main thing was but I just followed basically what I saw him do for the pico and it came out plenty good for how fucking easy it is.
