One of you fuckers mentioned something about raw white onions on tacos and I realized how S-tier of an ingredient onions are. Now I can't stop eating raw or very lightly cooked onions in everything....thanks.

Personally I find the carrot and celery make everything taste very same-ey. For example, spaghetti sauce made with mirepoix tastes a lot more like a generic store bought sauce to me. So I just stick with onions myself

I dunno, but the history of them is kind of interesting. Onions, garlic, leeks, etc all belong to the same plant family as lilies, the pretty flowers that come out in early spring. Humans have harvested the roots of lilies since neolithic times. The native bands in my area for example have harvested Camus lilies as their main food source for thousands of years. So perhaps over time evolution has driven both humans and lilies closer together because the symbiotic effects improve both of our survival fitness. I think it's interesting to imagine a random caveman nibbling on the tasty root he just pulled out of the ground, not realizing that his descendants would develop numerous domesticated varieties of this special plant.

85g white sugar
10g salt
220ml any vinegar, I used white wine
125g red onion
Bring to boil and stir to dissolve salt amd sugar, then pour it over your onions or whatever you want to pickle. Just done some rhubarb and blood oranges in the same way.

I really came to like raw onion about 5 years ago. I love a whole slice on a burger, I love putting diced on my Mexican style dishes, whenever a recipes calls for onion I always do extra. They’re amazing in all ways and they are very good at holding flavor when cooked in dishes.
