A few days ago I asked for pizza recipes, well here's my first attempt.
If it looks like shit it's because I double layered the cheese and toppings.
Honestly even though it's shoddy, this shit was delicious, the cheese alone was a huge difference from any chain pizza. The sauce was also ridiculous easy to make and better than any chain sauce, some of which just taste like synthetic paste loaded with sugar. The only part I had trouble with was stretching the dough, it didn't really wanna cooperate and I had to roll it back into a ball and redo it because it would rip.
I'm to try and make a more a serious pizza this weekend.

It looks like shit, shoddy, and the dough is not stretched enough.

At that point you'd be better off making breadsticks and a nice cheesy dipping sauce. Glad it was enjoyable anyway, better luck next time!

Looks 6/10, would try a slice.
Dough looks too thick and toppings don't look very melted/toasted.
Maybe try broiling for 10-15 at the end?

>> No.19161868

>>19161385
Any tips? I tried stretching but it would just shrink back, if I tried too hard the dough would start to rip.
>>19161411
The crust is thick, but the main part was actually thinner, I know in the picture it kinda looks like a bread bowl stuffed with cheese lol. Some parts of the cheese were more roasted than others, it probably has more to do with my distribution of the cheese and toppings, if can stretch it wider every thing will probably be more even.

you need to knead the dough till its completely smooth then let it rest

>> No.19161900

i'd eat it but you should look up a video on dough stretching
this one is good

Looks fine to me.
How long did you let the dough rise for? Did you push out all the air bubbles?

>> No.19161996

You're on the right track. Don't listen to online retards bitching about your crust. It takes a lot of practice to get your dough to the right consistency for stretching and it also takes practice to learn how to stretch and shape it. You'll get better. Just keep at it.

>>19161958
I was hungry and already shredded a bunch of cheese before I tried(failed) at stretching lol. I'll try again this weekend, I'm tired of paying 30 bucks for shitty chain pizza so I wanna get this right.
>>19161987
I kneaded it for 20 minutes and and let it sit for about an hour on my counter with a napkin over it.

>> No.19162420

There's definitely a lot of technique in dough handling but text is not gonna do the job, it just takes practice.

The key to cooperative dough is lots of gluten formation (high strength flour, thorough kneading, enough salt), good shaping (tons of surface tension) and enough rest between shaping and stretching (20-30 minutes at least).

>> No.19163231

Had some free time, working on part 2, had some better luck stretching the dough, but I still fucked something up because someone was nagging me over the phone, we'll see how it comes out.

Thank, and nice zaa.
My main goal is to make own pizza and wings every weekend, shits getting ridiculous expensive and orders are getting messed up. What prompted actually is I had some friends over a couple weeks ago, ordered some little Caesars to save on cash and that shit made me constipated for 3 days, couldn't take it anymore lol

RELAX... Don't worry..
Knead until dough is SMOOTH and elastic--then let REST.
Then do it AGAIN-- Or put on a pan and make pidzers...

Attempt 3.
This one I was a able to stretch the dough out more, however I forgot glaze it with olive oil so it came out a little harder, still pretty good tho. I was able to spread my toppings out more, and for this one I added a thin base layer of fresh Parmesan, and then a sprinkle some more on top of the mozz and topping.

Sounds like you didn't knead it enough before letting it rise, or perhaps it was too dry.

this looks like shit., stop piling on cheese like an autistic toddler, that dough is probably raw, you're literally making goyslop you utter fucking failure. No one wants to see your shitty blog

>> No.19164994

Pizza is all about the dough. Good pizza flour, 75% hydration usually works well for me, add the salt after 20 minutes, and no kneading required if you use less yeast and let it rise in the fridge overnight.

I have a baking steel but recently I have begun using a cast iron skillet, since you can preheat it on the stovetop really quick. Crunchy cheese crust since the skillet has tall sides, is not very Italian but insanely good
