Ive never seen a bean mix before. How does it compare in price by weight to individual beans?
Dried chickpeas are super cheap here and rice. Potatoes are down to about 60p per kilo now.
White cabbage is a much nicer ingredient than people give it credit it for, I sweat it down with onions and carrots and use it to bulk out beef mince. You can use some legumes and make decent soup with it too.

I buy a whole chicken, cut out the breasts and freeze, roast the rest with cheap vegetables. that makes two meals (whole leg + wing + skin etc). then I make the rest into soup add a can of creamed corn, etc. that's another 2 meals when eaten with bread. then with the breasts I defrost them and make a big batch of fried rice that's another 2-3 meals.

The simplest possible "curry powder" that still tastes pretty good is probably equal parts ground cumin and coriander.

A tablespoon of each plus a pound of red lentils, 2 onions, a bunch of garlic cloves, some ginger and a 14 oz can of tomatoes makes for 6-8 servings worth of fairly decent curry. Add water to cover and cook for ~30 minutes until the lentils get all mushy, then add salt and lemon/lime juice to taste. You can fry some more garlic in butter and dump it in near the end for some extra flavor.

Make big pots of things, portion them into containers that hold about 2 or 3 days worth of food(depending how long you can eat the same shit over and over) then freeze them. Stretch things with bread, rice and pasta. Make bread or dinner rolls and freeze them. Cornbread is quick and simple. Frozen vegetables are about $1/lb. Onions, garlic, celery and potatoes are all you really need to buy fresh if you're trying to save money. Chicken can be found for $2/lb. You'll want to figure out a half dozen or so chicken recipes so you won't get bored. Bacon is $5/lb and a couple slices will flavor a whole pot of beans, lentils or split peas. Plan your meals. Roast a chicken and have roasted chicken with rice and veg for dinner. The next day make a stock and use the remaining meat to make chicken soup, or chicken and yellow rice. Have leftover chicken soup? Add some roux and cream, reduce and make chicken pot pie. Learn to use spices and some simple pan sauces, too. Picrel was a simple sauce made by deglazing the pan the cooked the chicken in with a little milk and cornstarch. About a $1.25 dinner.

You drink soda? Not anymore, now you make iced tea or coffee. Now you drink Kool aid, bitch. You're poor, remember?

Yes, they have somehow become even drier than normal, unexpired, fully dried beans. They are drier still. And the drier the beans (lets not forget these medleys use older and therefore DRIER beans), the longer the cooktime. The more moisture (water) that needs to be restored, and the more gas or electricity spent in heating that liquid. You actually LOSE money cooking those extra dry beans because the water bills (extra water for drier beans) and stove bills (longer cooktime to force so much more water, also not free, into the extra dry beans) will far outweigh any potential savings. Just buy regular dried beans because they are less old and therefore less dry and therefore requiring less water and energy to cook them.
