In Australia lamb would probably be 1st or 2nd in that list, it's everywhere and everyone eats it because it's cheap. I think it's better than beef and pork for most things.

You can get lamb for a lot cheaper at ethnic markets, it's expensive at grocery store chains because it's a delicacy to upper crust Americans, that's why it's only sold Frenched or in packs of chops. Racked lamb is only $10.99/lb at the supermercado but $19.99/lb at Kroger and the only trade off is that you have to do some easy butchering before you cook it.

Lamb is a gamey, tough, dark meat. It absolutely requires seasoning to address the gamey aspect of the meat.

Can it be good? Yes, gyros are a tasty thing. But it is fuck off expensive for being shit meat quality. The taste and cost are the big reasons it is low tier meat. The fanciest thing you can do is french the ribs.

what country do you live in that you can't get lamb? I lived in butt fuck no where Japan and they occasionally had lamb in the supermarket even. I couldn't even buy burger buns, pretzels, or american pickles there.

Anyway it's delicious. Greek lamb is the best. I used to know this rich greek family growing up and they'd roast an entire lamb in their backyard. was awesome
