I buy the about 7 lbs from Costco. I user freezer bags and separate in to 4/1 lbs and 2/2lbs bags. Works great and no need to chisel out a pound when needed.

I will sometimes buy the chub, then break it down into 2 lb chunks then roll those chucks out in vacuume bags. They end up being like 1 inch thick once vacced. The store well and thaw super fast.

I generally buy smaller amounts as I go from a higher quality shop, but i do find it useful to use the Costco stuff to keep my freezer full. Do this with their pork loins and big packs of " country style ribs" too. can't beat the price even here in Pork country.

I generally aim for between 1 and 3 lbs. Typically cooking for 1 - 3 people. Having leftovers is something I usually prefer, rather than try to avoid.
That being said, if I'm going to freeze meat anyway it just makes more sense to buy a larger amount for cheaper and easily separate it into smaller packages myself than to buy more expensive smaller packages.
