The fact that the taste of rice is to Japanese liking is one of the reasons why it has been considered a staple food.
It has just the right consistency, moderate firmness, and a hint of sweetness, and its flavor, aroma, and luster are all favorable to the Japanese.
Another reason is that it goes well with Japanese side dishes.
Rice goes well with Japanese, Western, Chinese, and any other cuisine.

Look for inexpensive Chinese yellow wine, Shaoxing sake, or Japanese sake.
Other Asian countries also have rice-based liquors that you can try.

I make my curry a little differently than most. I don't like the texture of cooked veggies so instead of the stuff you see on the box with big chunks of meat/veggies/potato swimming in a sea of sauce I make mine more like a thick meat gravy. If you know what sloppy joes are it's kind of like that but curry style. I usually use 3 lbs of good quality meat, a mix of beef/lamb/pork or whatever I have on hand and a lot of onions. I cook it down until it's very thick and rich. Then I use it to top whatever veg or carb I feel like eating.
I happened to be out of everything end of last week but found a box of kraft macaroni in the pantry so I said fuck it and cooked that up and mixed in some of the curry and it turned out to be delicious.
It's not pretty though, maybe I'll make a thread about it one of these days if people want to see my weebslop.

My epic Japanese ingredients haul showed up today.

Lio jozo fujisu premium rice vinegar
Lio jozo honey sweetened purple sweet potato vinegar
Lio jozo akasu premium red vinegar
Wadaman dark roasted golden sesame oil
Horikawa nomura mitsuboshi shoyu
Yamatsu tsujita hawk's claw peppers
3 types of kombu, very high quality
And a seasonal sweet miso

The vinegars are all phenomenal. Especially the akasu and the sweet potato vinegar.

The miso is incredible also. It tastes of a mix of ripe tropical fruits. Amazing stuff.

I made a simple dipping sauce of the sweet miso, sweet potato vinegar, and sesame oil and it was absolutely delicious with rice and thinly sliced cucumber.

Going to be making edomae style sushi with my new donabe soon. Very exciting stuff.

After learning how to cook Japanese cuisine from scratch with authentic ingredients (thanks to some asian grocery stores nearby plus the international food section of my closest regular grocery stores), I started having a lot more fun cooking Jap food when I started to alter the recipes to make them more of my own to suit my tastes rather than sticking to tradition.

I still enjoy traditional Jap recipes, but I like my own versions of the Jap recipes a little bit more, and that's fine. Plenty of Japs love American foods but with a slight Japanese twist and there's nothing wrong with that. In the end, it's all about doing what satisfies you and what tastes good to you, and enjoying yourself while making it.

I'm not interested in having weeb contests with other westerners about who likes Japanese culture more, so I'm at peace.

And one of my favorite recipe videos to watch on youtube are professional Japanese cooks who make Western food.

Late to reply to this but I've westernized ramen, udon, sushi, and curry.

I won't say exactly how I westernize them since I know there are some autistic weebs in here that will try to start a fight so I won't give them the satisfaction lol, but the basic idea is just add whatever ingredients and flavors you like that you think would make it test better for YOU. It doesn't have to be authentic to be good.

Has anyone ever cooked with a donabe rice cooker? Is there anything you can do with one more easily than with a normal saucepan or non-rice-cooker donabe?

I'm thinking about picking one up, and just not sure about size. A lot of recipes I'm seeing call for using 2 cups of rice in a a 3 cup size pot, but maybe I could adjust for a smaller pot. I usually just cook for myself and don't need to prepare a shit-ton of leftovers for "meal prep" or whatever the redditors are doing these days.

The japs do consider it western food since it came from European schnitzel and American fried chicken traditions. For them though it's Japanese-style due to the preparation of the meat before breading and cooking it, the breading of panko breadcrumbs, and how it's usually served which is sliced into chopstick-ready strips and sometimes served with curry.

Speaking of curry, that is also a dish that Japs consider western because it's a derivative of Indian/British curry. That's why they call it "kare."

Btw, these days Japs actually have been starting to prefer fried chicken breaded with flour, potato starch, or potato flakes. Trends in Japan in the last few years also show Japanese society prefers wheat over rice these days.

Why is that? Why can't eggs be eaten raw in the US? Is there something they aren't or are injecting into them? How and what is the process of making sure a chicken lays an egg that is safe to consume raw? From what I understand the US washes the outside of their eggs that strips away a protective membrane outside the shell. Is that the reason?
