Those are actually the two ways I don't like cauliflower. Neapolitan pasta with cauliflower is a favourite, caulimash is great (I boil and mash it with butter then mix it with instant potato flakes for better texture and it's great as a side to roasts; it's also nice as a base for gnocchi, filling for pierogi and Neapolitan gattò), grated and stir fried with garlic, neem, spices and leftover rice and for capcay and curries.

Unless the eggplant was cut into extremely thin ribbons, deep-fried briefly on its own (IE unbreaded) then drained, wicked of excess oil and layered in a way similar to how one would layer lasagne, you haven't and the fact that you bring up its texture strongly implies I'm right. Anglicised versions cut the eggplant into thick fillets and bread them, which is a separate dish entirely, cotolette di melanzane IE eggplant cutlets. For some reason, Anglos have conflated the two. They do have a mushy interior texture which I love for its contrast with the crunchy breading though I completely understand why others might find it challenging.

Yes. I actually work on a farm that grows them. Every Friday, if there’s extra produce, we all head to the parsnip fields and have at it until midnight. Then, the last guy to make it back to the barn once midnight strikes has to eat all of the used parsnips.
