Looking for some cheap, repeatable lunch and dinner ideas.

I have these 'phases' where I eat basically the same thing for lunch and dinner for several months at a time and it's time to find a new thing.

So far I've went through:
- Chicken fried rice (Not very filling, oil smell afterwards)
- Spaghetti with sausage slices, storebought sauces (Not very filling, can change up sauces tho)
- Basic deli sandwich (Cheap but boring, not very filling so I usually eat canned soup with it)
- Burrito with chicken, homemade pico, guac, fake salsa (By far the most work, but decently filling)
- Grilled chicken, veg and rice (Very cheap, but boring after a while)

Preferably something that doesn't require frying with oil because it's hard to ventilate.
Something that doesn't require any cheese, or very little cheese.
<30 min cooking time, would love a one pot solution.

Any ideas would be useful, thanks friends.

Most things worth eating that can be cooked in one pot/pan/sheet in under 30 mins require frying in oil to some extent.

some old favorites of mine;
roasted chickpea broccoli burritos. switch up the veggies, beans, spices, and use other rice/grain fillings and these will keep you busy for years. prep can be under 10 minutes start to finish including cleanup, cooktime usually more like an hour but you can make huge batches and eat them for days.

Mujadara. Make sure to use black caviar lentils or this can suck. I like to add more veggies and other ingredients for more of a pilaf or casserole but if you get the recipe dialed you can eat this for months or years at a time.

you can do almost anything with vermicelli/thin rice noodles. the noodles take ~90 seconds to cook and the rest of your recipe can be improvised with whatever sauces, spices, veggies, and proteins you prefer prepared however you want.

Do you consider unattended time? And what are your thoughts on batch prepping?

That being said, assuming a strict interpretation.
>Frittata
Pick whatever fillings you fancy, cook them in a pan, pour a mixture of egg and milk over top once the filling is cooked, stir, then throw in a 350 oven for 10-20 min.

>Pot Pie
Cook some diced meat and frozen vegetables in an oven-safe frying pan with oil or butter. Once cooked, toss in some flour and coat everything. When the flour has dissolved, add chicken stock and stir over low heat for 8-10 minutes until a thick sauce has developed. Thin it with some milk, roll some puff pastry over the top of the pan so it covers all the filling(poke some vent holes in it), then put it in a 400 degree oven until the pastry is cooked and brown. If you are quick you can get it out in 30 minutes, but it'll take a little longer the first time probably.
