From the best burger joint in metro Detroit, Miller's bar. You can't see it in the pic but these medium rare burgers are served with blood still on them. Velveeta cheese is the only topping.

/ck/ doesn't know a good burger when it sees one. all those condiments and veggies you stack on your burgers are literal goyslop. a good burger is a thick patty cooked rare with a slice of cheese on a 10 cent bun, no brioche or challah or pretzel bun like you zoomers are into. if you don't like the american cheese (i understand the concern there), they offer swiss as a substitute. there's barely a place left in this country making burgers like they did 50 years ago.

What's the pros of a medium-rare or medium burger? I've increasingly become convinced one of the best homemade burgers is a single 1/2 pound chuck (or fatter) patty in a skillet over medium heat for 10-12 total until medium well or well. Treat grocery store ground meat like any other ground meat dish imo. Not sure if I have a different opinion for restaurant burgers.

While food safety is definitely a good reason for going further on the doneness, I feel like part of it is ground meat, especially the emulsified grocery stuff, doesn't have the same fiber structure as a steak, and therefore the protein denaturing that makes a well done steak tough and shitty shouldn't happen to ground meat if it's cooked in its own grease. I'm definitely talking out of my ass here, but I swear I'm not far off
