1 whole egg
1 egg yolk
2 lemons, zested and juiced
80g sugar
50g butter, cubed
Throw it all in a double boiler and whisk until it goes opaque and thickens. That makes enough to cover a cheesecake or have on toast for a few days. You can swap the 2 lemons for four limes or a large grapefruit.
