I live in France and it baffles me that 95% of the dairy aisle is skim. Usually there’s only one or two brands of whole milk choice. Sometimes 4 if you’re lucky.

True for the Mongols. Untrue for Bedouin shepherds. As for lactose intolerance, all the population data I've seen appear to be dubious and contradictory. Even Indians seem to consume a shitload of dairy and are still fine.
