I wouldn't suggest buying setian. It's about as easy as making hard-boiled eggs, but the pre-made stuff is obscenely expensive.

You just use less than what you would with a normal protein, I'd say. Small chunks works if you do that. Seitan is just dense. It punches way above its weight. You'll feel full with only a small amount.
