from what i know, "bologna" in america is usually made extremely cheaply
the ones labelled mortadella i imagine are made with a bit nicer ingredients, probably has fat pieces, might be spiced differently or have other add-ins
you're getting emulsified sausage either way but the different name denotes a different style
even if you just take a look on wikipedia, it has bologna described as an american sausage derived from mortadella

I grew up on fried baloney sandwiches, I loved them..
fucked up found out got stuck in county jail for 8 months where we literally.. got a half inch slice of government commodity baloney and two slices of white bread, everyday fucking day for lunch. I couldnt eat it after i got out. My moms would make a whole lunch spread for me and I couldnt eat the sandwich. It was until i had my wifes son and needed to make him cheap lunches.. Fried baloney was easy.. Thats also the first time in a long time I ate baloney. Now I eat it daily and even buy mortadella to be fancy but it tastes different fried..
