When I was growing up my step mom used to get these frozen family size chicken pot pies from sams club. We would eat it served over white rice. It was so good. One of the few meals she made I liked, mainly because all she had to do was bake it.

Nah actually grew up in a huge house. But there were seven people in my family to feed and my parents both worked full time jobs, so they took short cuts some nights. Their short cuts were usually way better than anything my stepmom made from scratch because she was a terrible cook.

There are a few brands of pot pie with no bottom crust. Can't recall any specifically, but I know that many homemade "pies" are like that, too. Just plop your sloppa into a baking dish or casserole and top it with a pie crust and bake. I've even seen Mary Berry do that shit on a show she did with Tom Kerridge. I think he was still fat back then.
The most well-known example, obviously, is shepherd's pie, but if you want an example of one with an actual pastry crust, stargazy pie won't typically have a bottom crust.

Sometimes when I'm low on money I'll make something similar since we used to eat pot pies over rice too.
I'll take some chicken, frozen peas and carrots, and condensed soup cans. Cook the chicken, stew with the condensed soup and peas and carrots. Then I'll meal prep that out with rice and eat it with hot sauce. It scratches the itch!
