Go look for authentic Indian stuff, should be lots of vegetarian dishes for you, though it might be hard to find vegan since Hindus fucking love dairy.

As for vegan cooking channels try Healthy Crazy Cool. Haven't watched him in a couple of years but a look at his channel seems he's more into vlogging now. His what I eat in a day videos are fun.
