These things are amazing. Had some at a Brazilian steakhouse so I had my wife find a recipe and make em.
Protip: dont cheap out on the cheese. The longer aged parmesan is great. But I think they use a different cheese in the original/traditional recipe.
My wife is only allowed to make them once in awhile because I will gorge myself on them they never last long in our house.

Alternative recipe for those who want a quick Pão de Queijo like pancake:
3 eggs
500g tapioca flour
200ml milk
50ml cream
Salt and/or whatever else you like to season, I use some salt, msg and white pepper.
You'll get a pancake like batter, and cook it in mostly the same way.

Use it as a base for a pizza, and you'll never want the normal thing ever again.
