You don't want them rubbery or hard to chew obviously. But I've never once had that happen to eggs I scrambled and all I do is put the heat high and keep it on until they seem done. So I'm pretty sure someone would have to go out of their way to fuck up scrambled eggs badly enough that they become hard and rubbery.
On the other hand, I think people constantly underdo scrambled eggs because psychologically they probably worry about going too far and not being able to undo it afterwards, when in reality most people who stop short don't go back and fry it more a second time making it the same situation either way in terms of getting stuck with whatever you made.
And I hate undercooked scrambled eggs. Awful on the digestion, less flavor, just all around bad.

Try this next time you do the left since it takes forever
Get a small pan like a 8inch fry pan.
Beat 3 eggs add salt and pepper.
Turn heat to medium.
Melt a good chunk of butter into the pan.
Turn heat to maximum on the strongest burner you got.
Pour in the egg fast.
Stir and shake pan so everything is mixed extremely fast.
Once it looks a bit runnier than the one on the left (30-40 seconds most of the time) dump it into a bowl and cover it.
It's similar but you cook it fast and it's got a smiar custard texture.

I just tried the slow cook method, I like it.
>combine six eggs, 1/4 teaspoon kosher salt, and a splash of milk.
