I see tons of people on /ck/ bashing Ragusea and Weissman, deservedly so. But what is the general consensus on pic related?

Obviously not Chef John levels of based, but he does have a few good recipes that are easily doable on an everyman's budget that also aren't trash. His general tso's chicken recipe is a favorite of mine.

I liked both books so far. I got them as a gift, they were like $10 each on clearance at costco. Completely unplanned by 2 different people happened to gift me both of his books at the same time. They have no idea who j kenji even is.

anyway, despite being a cringe liberal, kenji is not just an obviously talented chef, but a great recipe developer. so many of his serious eats recipes are absolute classics for me, and reading the longer explanations behind certain techniques and approaches was very useful for developing my understanding of cooking as a whole. seriouseats is easily my most visited food website

i mean mcgee is great, but kenji's recipes aren't just about "the science of the kitchen" to paraphrase mcgee; a lot of it is about pragmatism, and trial and error in terms of what a home cook has to do to make great dishes that don't necessarily mean using hard to find ingredients or traditional techniques (unlike the ultra-soy chinese cooking demystified)
