definitely something off with your brew ratio, try running your coffee maker with just water and start a timer when it starts dripping. once it reaches 5min turn it off and use that amount as your default water vol. using that add 1g coffee per 16ml (about 1 tbsp per 1/3 cup). this is what I do to calibrate my brewer.

It’s mostly to do with the roast. Light roast has a lot of it, medium roast has some still tucked in the middle of the bean. Darker roast tend to have little/none because the chaff is burned right off. It’s just plant matter, and it’s normal. You can shake the beans in a metal mesh pan/sieve if you really want and that can shed some more of the chaff but it’s literally pointless. I suppose electric grinder can chop the chaff up finer and less noticeable but it’s still there in the grounds.

If you just want cheap cheap, ALDI has peruvian and guatamala whole beans in 12 OZ bags for like $4/5 dollars, but the quality is pretty inconsistent. Trying a Yemen Burrai as espresso.
It's roasted medium-dark (strangely dark for a single origin that isn't cheap, but this roaster is old-school).

It's strongly nutty, earthy, dark, smooth, warm as a straight shot. Very smooth. No roughness at all, only a mild bittersweetness.
As a latte it's got presence but a bit more aggressiveness would be good. Tastes like roasted walnuts, brazil nuts, and hazelnuts. Long long aftertaste like I chomped down a bag of nuts.

This one's good. Just a bomb of nuttiness. Definitely a change from the chocolate-and-fruit style.

Not that anon, but my summary of espresso: coffee grounds are poured and packed into a metal filter basket with holes in it, and then pressurized water is forced through this.
The resulting fluid has both dissolved coffee juice and small suspended coffee particles.
The goal of this is to get the strength and body of stovetop/turkish coffee but in a fast and convenient way, without a gritty texture or grounds in the cup.

Ironically nowadays one of the main uses of espresso... is actually to make high-volume big beverages. if you're making 250 mL total size, a 25 mL shot of dark roast espresso will flavor and caffeinate that just fine. And then you're going to fill the rest with 225 mL whole milk.
But with filter coffee your recipe will be more like 200 mL coffee, 50 mL whole milk, or 150 and 100. There will be both less coffee particles and less whole milk protein/fat in the drink, making it less concentrated and satisfying (though also less fattening).
The espresso version has twice as many calories!

Now the flavor of this is rich, dark, decadent, thick, strong, etc with malty, roasty, warm, autumn, comforting, etc.
Diluting this a lot will lose its character... without giving you anything new.
On the other hand, light roast filter coffee, tea, lemonade, fruit juice, etc do have charm as a light dilution: they taste refreshing, light, long, floral, fruity, summery, cool, hydrating, etc.

That's my taste theory: there's a fundamental flavor divide, and on one side you can only "dilute" with milk (to retain the thickness and richness) and on the other side you're freely diluting with water.
That's coffee as a culinary taste experience.

Of course coffee is not just that, it's also a drug. For a long time coffee was all about "I'm a manly man and I work hard all day without breaks, I have to drink this huge amount of nasty dark brown watery liquid so I can keep working hard": the harshness was part of the appeal, reflecting the endurance of its drinker.

Unless you are some james hoffman level autist or just really really like espresso, it is true. Cold brew is cheap, easy to make, doesn't require expensive machines, produces good results with basic store bought pre-ground and can be used cold or hot. The 1L hario cold brew pot with the filter basket is like $25 USD and you don't need anything more, although I would get a different jug to decant the finished brew into. If you want to go full retard you can use a v60 and some filters to ensure you don't have any grounds, but even than is like $10 USD for a plastic V60 and some filters. Scale, cartons for holding things, even if you went all out I think it might be hard to spend more than $60 USD on a full setup.
If you use milk powder as well (which I have and can't really tell the difference to fresh, or at least long life milk) it can bring the price per serve down even more depending on how much fresh milk costs near you.
I worked out for my servings of about 450ml it's only 35 cents USD each.

Pourover offers more control which matters more the lighter the roast of your beans are. Additionally the grind is finer for pourover so whatever taste differences from that will be noticeable as well and of course this allows whatever taste differences from having a more uniform grind from higher quality grinders to appear. After some weeks of using my workplace coffee machine, I'm pretty sure coffee is a watered down version of espresso which is also a watered down version of ristretto. I don't know who programmed it like that but it's been around some years and nobody noticed, probably due to shitty coffee bean.
