You're working off a false premise there.
A lot of traditional Scandanavian cuisine was imported into the region by the influence of the wealthy King Karl XII of the historical Kingdom of Sweden (which encompassed most of Scandinavia at the time). Karl XII's wars lead to him travelling extensively and coming into contact with foreign recipes for dishes that he would have brought back to Sweden. A lot of what's now Swedish cuisine is the result of his extensive trade with the various kingdoms of Italy and contact with the Ottomans.
I'm not saying this as a sort of "there's no Swedish cuisine" thing either, as the dishes are still distinctly Swedish. Kåldolmar, for example, was an adaptation of dolmades, which Karl XII learned about during his time with the Ottomans in Moldavia.

Us scandinavians are culinarily fucked. The problem isn't our climate or lack of sun to grow food. There is plenty of amazing food resources here, from the sea, to all the herbs, to amazing wild game, to all our reindeer and our long tradition in curing and smoking meats for preservation purposes.

The problem is that we are miserable. All we do is live to work, not work to live. So we never prioritize whats good in life, we just prioritize sustenance and work. It might be related to us all being protestant, or it simply being some sort of natural culture that springs up in this climate. But when we do attempt to enjoy whats good in life, it just ends up being a parody of it, because we simply don't understand it.

A very large percentage of us (at least Norwegians) eat simple, dry and basic slices of dark bread with a light amount of toppings, like two slices of sweaty basic cheese, or one slice of salami, for every meal except dinner. They eat this for breakfast, they eat this for lunch and they eat this for evening. And they eat so much of it that they get fat. Imagine getting fat off something as plain and basic as a slice of bread with the bare minimum of toppings. Its slowly getting better, but if you try to enjoy life, you will still be seen as a weirdo.

Made pic rel for dinner yesterday. Both me and my asian gf really enjoyed it. We call it klubb (kløbb), also known as klubbe, raspeballer or komle. In my area it's traditionally seved vid dip (melted brown cheese with milk), bacon and light syrup (as in oppose to dark syrup).
I am curious if anyone else than Norwegian have this dish? It's basically made out of grated potatoes formed into big balls (a lot of that here), and cooked for a long time in meat broth. Every region has its own way of cooking it here (Norway). Would you eat it?

No, in rural places the local food is worse because their palate is underdeveloped due to lack of exposure. They aren't even aware of it since the only foreign food they have tried is the local kebab (worst kebab possible), local pizza place (usually completely fine but far away from actual good pizza) or the single asian restaurant. These foreign places have no competition in rural areas, and doesn't need to perform. So all they eat is shit local food, and shit foreign food.

When you get into larger cities (no cities are large in scandinavia compared to the rest of the world) the local food and the foreign food gets better. People simply have a more developed palate because they are exposed to more food. Butchers, fishmongers, and food markets can actually survive since there is enough people to buy their products. There isn't one measly grocery store with a shit selection, but multiple grocery stores that have to compete (even then its shit, grocery stories in Norway is complete cancer due to massive monopolies and corruption). Restaurants that serve local food and foreign food can actually survive in cities as well, they can't in rural areas. In rural areas you only get chain-restaurants that just reheat frozen products from a factory (Kanda), kebab shops that are a front for laundering, or that single asian family that runs a restaurant in the first floor of their house where they survive only because their kids work for free or they import slave labor from asia.

There has been an effort here for quite some time to fortify common foods with additional vitamin-D. It’s honestly quite weird. My parents lived in Burgerland for a decade and in Ingerland for another five years. They’ve travelled a lot and are, as stupid and arrogant as this may sound, rather cultured people.
