Why does /ck/ not have a general for fermentation? Disgraceful.
Anyhow. I need advice for fermenting buttermilk.
I recently bought some store bought buttermilk and I was hoping to re culture it again and again. I have always thought about doing this and I know it's possible, but I can't figure out what I'm doing wrong.
Here's what I'm doing:
>feed culture with fresh whole-milk
>leave in warm place for 12 hours
It thickens and smells wonderful but it doesn't reach a viscosity comparable to store bought, and makes underwhelming waffles and muffins.
Apparently, fermenting buttermilk at home is super uncommon, as Google and other search engines only have limited resources about it.
Next I will try using milk powder, because I think that might be what commercial buttermilk is fed. I'm hoping somebody can help me.

I saw some shit on making your own kefir, it was something along the lines of filling it up with water(?) when it's 1/10th full. Doesn't help you with buttermilk but whatever. There used to be /fpg/ but I'm pretty sure it was just a few dedicated autists if not a lone one. Also, why is it like this? When I first came to this board I thought it would be full of inspiring bakers and chiefs but it turns out those posts are uncommon. It feels like it has the same problem which /g/ has.
