In Nürnberg we eat them with Sauerkraut or Potato Salad on the side. If you wanna make things easier, just get a nice Kaiser Roll and squish 3 or 4 Bratwürstchen in there, add some Ketchup/Mustard and you're good to go.

Oh nice! My Dad made this potato salad thing that may have had what is called Potato gratin on top? It was cooked in the oven and boiled in it's own potato juices and it came out very savory.
I love Bratwurst hotdogs.

For Bratwurst just grill or fry them and serve them with mustard, a potato based side dish and some vegetables of choice. Sausages are nothing you make fancy stuff for.

"sausage" is "salchicha". Chorizo is a spicy sausage made with smoked paprika and CURED. Some places in latino america use chorizo for sausages but that's just wrong.

In Mexico, chorizo is different from in Spain, but it is still specifically a heavily-spiced, paprika sausage.

both Portugal and Spain recognize chorizo as their own type of sausage, which we dont even consider sausage, it literally is considered chorizo

now like spain bro said, iberian chorizo is not to be confused with latin american chorizo. their shit is in no way shape or form the same chorizo as the ones we make in Portugal and Spain
completely different seasonings, parts of meat, curing times, processes and final taste.

We also don't cook Portuguese or Spanish chorizo that often, it can be done, but most of the time it's best enjoyed with some fresh bread, cured goat cheese, olives and a good red

i am very biased when i say this, nothing beats Iberian chorizo if you really want to include it in the sausage category
go to portugal or spain, hit up a local "tapas" spot (i fucking hate that mainstream name) and have them cut you up some real chorizo, you'll never want any other type of sausage again in your life
