Some people consider oxtail to be offal, so that. If you, like me, don't consider oxtail offal, then tripe, if properly prepared, is nice.
Some people (not me) consider tongue to be offal, so if you draw the line at oxtail, than tongue would likely be the best tasting.

it depends on where you get them from. if you buy offal from the dollar store, it will taste like shit. if you buy it from a grocery store, it will taste like shit. if you buy it from a farmer, it will probably taste great.
i buy liver from a lady in a trailer on her farm and it tastes extremely sweet and tender, much better than any other offal, tongue, brain, and sweetbread included.

Your best bet is finding a local lamb farmer. A fancier butcher may have them. They're very good and definitely worth seeking out. Preparing them well is a little tedious tho. Tender, juicy, with a very mild liver flavor.

If you haven't cooked offal before then poached pork heart is not that strong tasting. Fried chicken liver with onions is nice. Pork liver has a stronger taste than chicken or beef. I haven't had brains but they are creamy and buttery. Bone marrow is amazing.
