vegan lasagna:
1. cook 1/2 lb of navy beans. I use a pressure cooker but you can soak overnight and then boil for 2-3 hours
2. next is homemade sauce:
>2a. add 1 tbsp of olive oil to a small saucepan and heat to medium. dice 1 white onion and sauté until they're translucent
>2b. dice 4 garlic clove and add to the pan along with 1 tbsp oregano and 12-16 basil leafs, chopped. cook for 2 minutes
>2c. add 1 can tomato paste, 8 fresh diced tomatoes, 1/2 tsp salt, 1/4 tsp black pepper, and 2 tbsp maple syrup. simmer for at least 2 hours, stirring occasionally.
3. Preheat oven to 400 °F. boil water and pour it over 1 cup of cashews, set aside to soak for at least 20 minutes
4. once again heat 1 tbsp of olive oil in a pan. dice a white onion and sauté until translucent
5. add 24 oz of chopped mushrooms and cook until the mushrooms' juice has almost evaporated
6. add 10 oz of chopped spinach, 1/4 cup nutritional yeast, and 1/2 tsp salt to the mushrooms. stir.
7. drain the cashews (retain the soaking water) and blend them in a food processor with 1 tbsp white vinegar, 1 tsp salt, and 1/2 tsp garlic powder
8. add the soaking water a little at a time, up to 1/2 cup and keep blending. the texture will start to resemble ricotta.
9. in a casserole dish, assemble the lasagna:
>9a. start with 1 cup of the tomato sauce in the bottom of the dish, and then add the following layers
>9b. lasagna noodles
>9c. 1/2 of the spinach mushroom mix
>9d. 1/3 of the cashew cream
>9e. lasagna noodles
>9f. 1/2 of the navy beans
>9g. 1/3 of the remaining tomato sauce
>9h. lasagna noodles
>9i. the rest of the spinach mushroom mix
>9j. 1/3 of the cashew cream
>9k. lasagna noodles
>9l. the rest of the navy beans
>9m. 1/3 of the remaining tomato sauce
>9n. lasagna noodles
>9o. top the lasagna with the rest of the tomato sauce and the rest of the cashew cream
10. bake covered 40 min and then uncover and bake for 10 more min. remove from oven and let it sit for 20 min before you dig in
